Freezing mashed potatoes & turkey

Hi,
I want to alleviate some stress from the upcoming holidays....would like to make my turkey and mashed potatoes about a week prior to serving them. Do you have any suggestions on freezing them? or maybe not a good idea?

Freezing mashed potatoes & turkey
There is an excellent recipe for freezable, holdable mashed potatoes on the Big Pots page. The turkey will suffer if frozen; if you must make ahead, do no more than 72 hours ahead, and see the article on safely storing and reheating turkey on Big Pots.
