I am wondering if it is possible to use tapioca as a base for a chewy candy. I have seen tapioca as an ingredient in ginger candy and would like to make some chewy ginger candy using agave instead of sugar. Any suggestions? Thanks.

Tapioca flour is what is used in the ginger candy, but the chewiness comes from the sugar and maltose. I don't know if agave will thicken up on heating as sugar syrup does, and that would be critical for chewy candy.
