Stuffing in foil pans placed in a Nesco

Ellen,
I need to make a double batch of stuffing and due to limited space in the standard oven, I thought about using my Nesco for the stuffing. I would like to bake the stuffing in 2 foil pans. Can I place the foil pans in the Nesco? Will the stuffing bake the same? And my recipe calls for a temp of 350 for about 40 minutes; should I stay with that temp and time or do I need to adjust that?
Sincerely,
Carol

You would probably do better with one large foil pan- I have not seen two smaller ones that would fit side by side in the roaster, and you don't want to stack them. Preheat the roaster 20 minutes, same temp, same time. It will not get the crispy top/edges, you can run it under the broiler for a few minutes if you need that.
