I am serving three meats and three sides for 400 people. How many pounds of Brisket, Sausage, and Bologna do I need, and how many gallins of beans, potato salad, and oz. of cole slaw?
The sides are covered in the plan for 100 page BBQ side dishes table- 4 times 100. For the meats, I would do this:

Brisket, 2 pounds raw well-trimmed per 5
Sausage, and Bologna
I can't suggest how much of each, because I don't know the local preference, but you want about 100 pounds total.
