How many pounds of shrimp would I need for a shrimp coctail as an appetizer for 60 people

Tail on, ready to eat, 3 to 4 ounces plus 1/4 cup cocktail sauce per person if served per person; if buffet/self serve, people are very greedy for shrimp and you have to allow at least 5 ounces per person.

It depends on how the shrimp is prepared and whether it is self service or passed, but you need at least 1 pound shelled shrimp for each 4-5 people. 2-3 mushrooms per person, depending on how much other stuff is served.
