I have a good recipe to make applesauce in my crockpot, but want to do a larger quantity. Can I do the same thing in a GE roaster oven and is there a recipe to follow, what tempature would you set the oven on to cook the apples?

Yes, the roaster will function as a crockpot if set to 285-300. Use your recipe. You can do about 18 pounds of apples in one roaster.
