cheese straws for 24

I need to make cheese straws (2 kinds) for a cocktail party that will have 3-5 hors d'oeuvres total. Party starts at 8:00 p.m.

Hello again, Leona,
I would probably do a sharp cheddar with chili type spice and a mild one (jack/etc) with dill and other green herbs, maybe chives. Allow about 1 ounce ady to eat per person per hour, if there will be at least 4 other things.
