I'm cooking for 65 people and I'm making 8 different side dishes. If I'm making a side dish that a single batch would be 8 servings, how many more times do I make the side dish to
have enought for 65 people. I hope that make sense! Thanks

With this many people and this many dishes, here is the basic rule of thumb I use;
per person:
1 to 1 1/3 cup cooked starches- could be potato and part rice and part noodle.
1/2 cup per each vegetable and each salad
1/4 to 1/3 cup each, odd interesting things (sauerkraut, frog eye salad, etc)
You need to end up with at least 1 gallon of sides per each 8-10 people.
