Roasting 60 lbs of pork butt for luau
Melissa

I am roasting 60 lbs of pork butt for pulled pork sandwiches. The pork comes in 15 lb roast and I have a double oven. What temp should I roast them at considering the amount, and how much time will it take?

Go by the weight of the heaviest, allow an extra half hour , preheat the oven. If you slow roast at 300, it will shrink less than traditional faster roast. See the beef roasting page for help; the shoulder cooks about the same as chuck.
