I am cooking dinner for 100 people serving boneless chicken breast AND roast beef. Dinner will be served buffet style. I generally like to have 1 breast per person when serving 2 meats family style - would you follow the same rule when serving buffet style? How many lbs. of beef? Thanks.

Yes, perfect on the chicken, For a boneless roast, you want 2 pounds raw for each 5 people when serving as one of two meats. You count on 5 ounces cooked beef PLUS 3 ounces cooked chicken per person when serving both.
