Outdoor Wedding for 200

I am helping my friend plan her daughters wedding reception. There are 4 of us helping prepare the food, which will be served outside under a tent. I would appreciate any suggestions you have on quantities.

From looking at your site, this is what I have come up with. 20 gallons of rhubarb punch, ice water, coffee. For appetizers 5 lbs of cheddar, 5 lbs of jalepeno, 5 pounds of co-jack cheese that is cubed, a variety of crackers, vegetable tray consisting of 3 red peppers, 3 yellow peppers, 6 pounds of baby carrots, 5 pints of cherry tomatoes, 5 pounds of brocolli, 3 heads of cauliflower, 2 1/2 pounds of radishes with 2 quarts of spinach dip and 2 quarts of ranch dip.

The main meal will be two different meats -chicken picatta made with 63 pounds of chicken, 38 pounds of ham, 20 gallons of rice pilaf, 20 loaves of french bread and 24 pounds of mixed greens tossed with craisins, pecans and 6 cups of raspberry vinagrette.

20 gallons of rhubarb punch, ice water, coffee
It's enough punch but I am not sure about the rhubarb?.

5 lbs of cheddar, 5 lbs of jalepeno, 5 pounds of co-jack cheese that is cubed, I would go with 20-24 pounds minimum
a variety of crackers, 12-14 pounds

vegetable tray consisting of 3 red peppers, 3 yellow peppers, 6 pounds of baby carrots, 5 pints of cherry tomatoes, 5 pounds of broccoli, 3 heads of cauliflower, 2 1/2 pounds of radishes with 2 quarts of spinach dip and 2 quarts of ranch dip. That's about 27 pounds of vegetables, I would go for 4-6 more- I would probably do some relish-type- pickles, marinated mushrooms, etc

chicken picatta made with 63 pounds of chicken, OK none left
38 pounds of ham, 40 minimum ready to eat- and again, none left

20 gallons of rice pilaf, plenty
20 loaves of french bread I usually do 12 per 100
24 pounds of mixed greens tossed with craisins, pecans OK, none left
6 cups of raspberry vinagrette- usually for this much salad, I serve the dressing separately and allow PER 100: 12 8 ounce bottles or 3-4 quarts (1 gallon) salad dressing)- more if thick and self serve .
