How much for Baby shower for 48

Hi there, I am feeding 48 people (the shower starts at 1pm), the menu is as follows:
Apps--Crudite platter, Spinach pita
Entrees--Veggie Lasagne, Half Sandwiches and Soup
Salads--2 types of salads (one green and one tomatoes and mozzarella)
Desserts--2 tier cake and strawberry shortcake
I am planning on making 2 pans of lasagne (half chafing dish insert size) and 8 quarts of soup... I'm not sure on the salads and the sandwiches?

For 48 people I would do at least 10-12 quarts of soup.
6 pounds green salad, about 4 quarts cherry tomatoes for the second salad.
3-4 9x13 lasagna
48 1/2 sandwiches
