OK, you have enough on the menu. Take 3 deep breaths.
Most of these foods are already listed on the plan for 100 lists, for these I just wrote, "list".
Italian Beef (how many lbs?) 1 pound ready to eat for each 3 people
Mosticholi (want to do half pans, how many lbs of pasta fit in one?) I think you are using the aluminum pans that hold 2-2 1/2 pounds dry pasta. You need 8-12 pounds for this crowd, depending on appetites.
Teriyaki chicken kabobs (using chicken tenderloins, cut in half and put on stick, each tenderloin makes 2 sticks, how many lbs of chicken tenderloins?) 2 per person
Potato salad (how many lbs of potatoes?) list
Oriental salad (how much cabbage?) 22 pounds cabbage if cabbage based. If noodle based, see my recipe for Asian noodle salad
baked beans (doctored up canned, how much?) list and see my bean page
fruit salad (how much fruit?) see fruit tray page. Make trays instead of salad. Prettier, keep better and the leftovers are more useful.
chips at least 6 pounds if potato, 8 if corn. More if dip (1/4 cup per person dip).
cookies (chocolate chip, peanut butter and sugar cookies) how many dozen? 1 of each flavor per person
1 sheet cake- OK
