how far in advance can fruit & veggies be cut

I am hosting a graduation open house, and i will be very pressed for time the week leading up to the party - i have only a few hours each day to make advance preperations -
how far in advance can fruit such as pineapple, watermelon, cantalope be cut and put in zip lock bags?
like wise for broccoli, califlower and mushrooms?
I am hoping to save valueable time by cutting them as far in advance as i safely can.
also- how far in advance can a watermelon boat/basket be carved out? if it was carved on Thursday for a Saturday party is that too soon?

how far in advance can fruit & veggies be cut
The boat is best made day of and will not keep over 24 hours. Cut watermelon is also a 24 hour item.
The keeping on the rest is discussed on the veggie tray page and the fruit tray page. Some veggies can be done a few days ahead.
