can I cook chicken and rice casserole for 125 people in my rival roaster oven? How long and what temperature?

It will take 2-4 roasters, depending on whether it is directly in the cookwells or in pan inside. But yes, it is do-able.

Thanks for the response. Can you tell me about how long I need to cook the chicken and rice and what temperature? How full do I fill each roaster?

12 to 14 quarts. Preheat the roaster for at least 20 minutes before adding the cook pans. Cook the rice at the same temp and about the same time as you would in the regular oven, with these precautions; bring broth or water to a boil on the stove top before adding; keep the lid on TIGHT except when stirring; don't cook above 350.
