If this is the main dish you want 2 cups per person, if a side dish without white ricer also, 1 cup, with white rice also about 2/3 cup.

Thank you Ellen for your prompt reply. Yes this will be the main dish, but we will also be surving Spring rolls, and an Asian green salad.

Thern you want to stick with 2 cups, and if it is buffet/ self serve, add another 10% for big eaters and seconds.
