I am cooking rice in a 20 cup commercial rice cooker. Can I keep it warm in a 18qt roaster? and for how long?

Keeping rice warm & safe
Yes. Set roaster to 180 degrees, preheat before adding rice, and put a couple of layers of dampened heavy dishtowel over the top before covering. Will easily hold 2 hours. Use Basmati or converted ("Uncle Ben's") to reduce the risk of sticky-ness.
