Hi,
What's a good menu for a Father-Daughter Dance? No Moms, just Dads and their girls, to ages 21. and I know 3 families that plan to attend are vegetarians.

OK. This is a pretty tight budget for a catered dinner this size, especially since I assume you want dessert included. The three types that might be within reach are, Italian, TexMex and BBQ. I would skip BBQ` due to the dressiness of the occasion and the veggie families.
I suggest you get with a few local caterers and talk honestly about the budget, and see what they offer.
You could cut costs by supplying beverages and desserts yourself (maybe moms would do cakes and brownies in exchange for their night off...)
