We are planning on serving scrambled eggs to around 100 people--need a good recipe that will not turn the eggs green----can these be done in necco roasters?

Yes to the roaster and the scrambled eggs that will hold recipe is already listed in the egg FAQ section of the recipe box. There is also a breakfast planning page to do all the other foods for 100.
