Hi Ellen. I am planning a fundraiser dinner for approximately 200 people. I have looked over the plan for 100 and have come up with a quote. could you please check it over and let me know what you think? We will be serving roast pork tenderloin (100 lbs raw), mashed potatoes (75 lbs), tossed salad (30 heads plus tomato,radish, and onion), glazed carrots ( 60 lbs), dinner rolls (1.5 per person), glazed plantains with ice cream ( 1 plantain/person and i forgot to check the ice cream amount). Does this sound about right?

You will have plenty, will have carrots left over, rest looks OK, I would add a spiced apple ring or slice for color and taste to the plates.
