morning reception at school

I need help with quantities for a reception following a musical program for Grandparent's Day at school. We are having ham biscuits, finger sandwiches, sausage balls, cheese and fruit trays, veggie trays, nuts, brownies, cookies, punch and water. It is for preschoolers and parents and grandparents before lunch and we are estimating 275 people (including the kids).

I would really appreciate any help. We are currently thinking 320 ham biscuits, 200 finger sandwiches, 400 sausage balls, 6 large cheese and fruit trays, 4 veggie trays, 4 large cans of nuts, 250 brownies, 250 cookies, ?? punch and 192 small bottled waters. Any thoughts??

I would make at least 2 sausage balls per person, and at least 1 brownie and 1 cookie for each, but other than that, this looks pretty good. You want at least 15 gallons of punch plus coffee service.
