I'm trying to figure out how many vegetables to buy for fresh vegetable trays for 250 people. The two ounces per person amount is that two oz. per vegetable or two oz. total? Menu also includes fruit tray, peeled shrimp with cocktail sauce, cheese & crackers, almonds & mixed nuts, cookie tray, punch & coffee, tea water. Hours 2-4PM & 7-9 PM. A grand opening for a woman's fitness center.

Sorry to tell you, as a one time event you can't do much cheaper than the soup-and-salad-bar type franchises, about $8 per person with tea. The salad and potato bar quantity table was lost in the computer crash of December 24 and is not yet reconstructed. You can get gorgeous baking potatoes cheaper by the case at a produce market , you want the size called "80's" for the really big ones. If you buy by the bag, roast some garnet yams, too.

You can get basic ideas about the potato bar toppings by using the taco tables- the amounts are very close.

Nancy, a 5 pound in the bag corn beef, because of the fat layer and liquid, only makes about 12-14 good servings. I would look for 8 pounds, as lean as possible "flat cut".

Patti, 1/2 cup ready to eat, which is about 4 ounces for most fruits and vegetables, is counted as 1 serving. In the OAMC section in Big Pots, there is an enormous table on how to convert between weights as purchsed and cups as served for all kinds of foods, including most fruits and vegetables. You want about 110-120 servings for 100 people if it is buffet style service.

For 110 people, I would suggest more like 200 pieces.
The #10 cans (the big ones) hold 24-25 1/2 cup servings, 4 cans is 3 gallons, I would want about 12-14 cans total for 110, for example, 5 cans of baked beans. So you might add more, or consider mixing, for example, a #10 can of drained chop suey vegetables is delicious in the green beans; or stewed tomatoes or lima beans in the corn.
You want 2-3 muffins per person, consider using the simple cornbread recipe on the chili page, much cheaper. Do have real butter, jam and honey for the bread.

I am out of practice and am doing dinner for 35 (mostly men) of roast beef, mashed pot, carrots, boiled onions, dessert, etc.
I assume I will do 1x1 sirloin...stuck on the amount though. I also can't remember the average size of a 1x1. I am thinking 11-13lb? I think I need 15 lb. of beef, 15 lb potatoes, 10 each of carrots and onions. Does that sound about right?

Depends on if you mean raw, bone-in weight. If so, this piece will only make about 9 pounds cooked ready to serve beef- fine for plated, but if it is buffet, you want someone serving the beef to make sure everyone gets some. Rest looks like plenty.

Unless you are sure all are beef eaters, consider adding a side dish that can serve as a vegetarian/ non-beef entree.

Sorry, but I do not do buy lists on demand, and these requests do not give enough info about the events to do a good job (what else is served, time of day, etc). Most of these foods are already covered in the plan fo 100 lists, and there are whole sections on fruit trays and veggie trays.

The basic rule of thumb for these little ones is 1 tablespoon per year of age, so a serving for a two year old is 2 tablespoons, while for a 4 year old it is 1/4 cup. There is a page on the website that converts all kinds of cans to cups- and another for most pounds of fresh food to cups. This should help.

Also, the USDA publishes nutritional guidelines for school meals for kids of all ages- that will give you further guidance.

Anne, you want about 1 gallon TOTAL of all salads/beans for each 10 persons- I usually start with 30-35 pounds of potatoes and 6-7 pounds pasta for each 100 people, which makes plenty.

A party type portion of roast beef is figured at 3 per pound of ready to eat cooked sliced beef, the plan for 100 table has info on how much raw to start with. 60 pounds potatoes is probably fine for normal adults- if teens or all men, use 70.

These items are listed on the plan for 100 page- very simple for you. I suggest you use the "freezable, holdable mashed potatoes" recipe in Big pots. You can make ahead and reheat. Be sure to slice the ham ahead, and you will use about 10% less if someone serves it rather than self-serve.

Lynn, these cook way down so you want 1 pound raw for each 3 persons.

Kathy, if you are cutting and serving yourself and cooking low and slow to reduce shrinkage, 11 pounds will be just about right. But if it is buffet or there are several teens or other large eaters, you want any extra, go at least 2 pounds larger.

Laura, a big boneless chuck roast will be fine and much cheaper than all the little tri-tips. Go toward 25 pounds with the chuck, it is a little fattier than the tritip. The amount needed goes down a bit with heavy sides such as scalloped potatoes and broccoli casserole.

Nancy, 7-8 pounds is plenty.

Hi, Val,
Since I posted all my quantity tables in 2004, I ask folks to estimate their amounts first, then let me check them. For example, if you are planning for people to make sandwiches with the meat and buns, you need different amounts than if it is simply plated. Time of day and type of service also matter: you need about 10% more for buffet service than for table service, and you need about 50% more at a mealtime tan in the middle of the afternoon. So take a stab at estimating and then send that with some details about the time of day, type of service, etc, and I will be glad to check it for you.

The most complicated estimate is the cabbage rolls, and with the other meats, I would allow 1 per person plus 10% if they were larger or 2 per person with no extra if smaller.

You want 2/3 of the amount for 100- you will find all your items on the plan for 100 page and the BBQ and brisket page. For example, slaw for 100 you start with 20 pounds fresh cabbage, so your party would start with about 14 pounds, 35 pounds raw potatoes for 100, so about 24 pounds for 60-70. 6 pounds of chips for 100, so you want about 4 pounds. There is a page for beverages, and the sandwich event page tells all about condiments for the sandwiches. I allow 1 hotdog per person, and I encourage you to consider Polish sausage or kielbasa- tastier and about the same price.

Usual to allow 1 pound per person for a party or afternoon function. You could get by on half that if it is a sit down meal with the glasses served ahead.

Your plan for 100 tables are wonderful! Thank you. Do you find that guests typically eat more carrots and celery than other veggies or should I buy equal amounts of each? Veggies I'm planning on serving in a buffet for 200-250 people are: Carrots, Celery, Broccoli, Grape Tomatoes, & Snap Peas. What ratio would you use? I was planning on using the 2 oz. per person quantity. Thanks! Oh - and are you still willing to look over estimates? If so, should I just e-mail them to you?

Hi, Rachel. yes I do still check estimates and you can post on this forum (I suggest you click the "start a new thread" option in the small print at the top of the question column) or email to the updates address at the bottom of the page. With that selection of veggies, they will happily eat everything pretty much equally, and I might go to 3 ounces- they are all popular- unless you have other finger foods (fruits, etc).

Rebecca, not enough protein is a real issue with seniors. The minimum, take my number for 100, divide by 4 (which would be 25 regular folks), then make at least 2/3 to 3/4 that amount for your seniors.

What I would do is allow 1/2 pounds raw weight ribs per person PLUS 1 piece of chicken, skip the hamburgers and have Polish sausage or kielbasa instead of regular hot dogs, get a litttle over 1/2 sausage per person. If you are on a budget, watch for the sales of previously frozen spareribs- they get as low as 1/29 a pound here. Chicken is least expensive if it is all leg quarters, cut into two pieces. The sausages are least expensive at warehouse or club stores.

Hi Ellen, I like your site. My daughter's 1:30 pm wedding is followed by a reception for around 200 people. There will be a meat tray with buns, fruit, chips and pretzels (with dip), cake (The day before,I will be icing 6 frozen double-layer cakes and baking 3 batches of cupcakes and making 3 more cakes in 9"x13" glass dishes.) and drink (I will be preparing 16 gallons of one drink and there will also be tea and water.) We will be cutting the fresh vegetables for a relish tray. Does my estimate look okay to you? Too much or too little? Most will be cut 3 days before the wedding.

Vicki, good timing people will have eaten lunch, so you only need about 1 pound total of food per person. Did you look at my veggie tray page (button at the top of the cook talk main page). 3 days ahead is a little early for some of your veggies, there is a prep ahead table on that page. If you buy and store VERY carefully, you will probably be OK with the peppers and cukes, but you could also consider going for peperoncini and sweet banana pepper rings and little sweet and dill whole pickles, maybe some olives- a nice relish touch and ALL READY TO SERVE from the jar or your homemade Italian dressing marinade. Allso, take a look at the many extra ideas for veggies and relishes on the relish tray recipe at the top of the veggie tray page.

Maria, you need to provide additional information: buffet/self serve or plated? Gravies, sauces? Desserts? Salads? Bread or other dishes? Also, I cannot estimate how you should divide up the entrees- I don't know the preferences of your crowd or region. Usually with multiple entrees, you can allow 1 piece of chicken per person. The rest- see the plan for 100 page, meat section, for roasts.

There is a table for making lasagna in large amounts on the lotsa pasta page.

The rice is the only thing that is easy- if you have no other starches you will want to cook at least 10-11 pounds raw rice. Fresh veggies, you will want about 20 pounds ready to cook per 100.

There is a beverage planning list to help with your sodas. Info on fruit salads is on the fruit trays page.

Make your estimates and post them and I will check them for you.

Suzanne, about 25-27 pounds per 100, depends on how much of the tips you will lose (larger beans, you lose more).

Sorina, this is very late to start work on this!!! What is the kitchen arrangements? Have you hired cooks (you will need at least 4) and servers (18-20)?

When serving beef and chicken buffet style at a party, most caterers figure 5 ounces cooked ready to eat beef PLUS 1 piece of chicken per person. This basically allows everyone to have their first choice and the many people who take some of each will have enough.

To get 5 ounces cooked beef, you need 7-8 ounces raw.

You want to allow about 8-10 pounds of bread per 100 people.

Kay, the canned collards are not too tasty. The frozen are much more delicious. You want 1 pound frozen (2 pounds raw fresh) for each 4 people. For the sweet potatoes, see the holiday cooking section at the top of big pots. For the mac and cheese, depends on the recipe. For the mac and cheese, minimum 1/2 pound per pound of dry macaroni, but I go up to 1 1/2 pounds when I have lots of cheese. I use part sharp cheddar, part moterey jack for creaminess and part aParmesan or Italian cheese blend for depth of flavor. 1 pound of macaroni serves about 10 as a side dish of mac and cheese.

Go to the top section of the big pots page and use the shopping guide there. Check the plan for 100 page for any additional items. Treat the cooked pork roll like cooked ham, but allow for about 1/3 weight shrinkage from the raw form. Ham does not shrink quite as much when it cooks, as pork does.

This is such an aweswome site.

I am planning an anniversary party for my parents. We are planning to serve 200 people dinner (6pm).

We plan to serve: Two 180 pound roasted pigs and 18 roasted chickens. The hot veggies we are serving: 4.5 gallons of mashed potatoes, 6 #10 cans of green beans, 6 #10 cans of corn and 4 #10 cans of baked beans. The salads: potato salad made with 40 lbs of potatoes, maccaroni salad made with 8 lbs of dry maccaroni, 4 gallons of slaw and 20 lbs veggie trays.

We also plan to have a dessert buffet with about 400 servings of various desserts.

Drinks: 96 bottles of water, 6 gallons of tea, caf and decaf coffee and 15 woliter bottles of soda.

Bread: About 18 dozen dinner rolls.

I used the info from "planning for 100" to figure the amounts. Do I need to make any adjustments?

This looks great, good work, Taylor. The only change I would make, is you really do need mashed potaoes from about 60-70 pounds for 200 people- everybody takes some, even with the potato salad. I would also add 1 or two #10 cans of drained Chinese/ chop suey vegetables to the green beans for interest and quantities.

I might put pineapple in the slaw with the pork, and I might put out a huge bowl of the little spiced apples or slices, the red ones, for color and taste with the pork. Also, you might consider on big dish of egg salad or possibly pimento cheese in case of vegetarian diners- with 200 people, you are likely to have some.

Put together your estimate and post it and I will check it for you. For 40 people you need a little less then 1/2 the amounts for 100- with the smaller groups, it doesn't even out quite so predictabley.

If you plan for 100 people worth of chicken and 150 of beef you will come out close- but you must add an extra 10% to each for multiple entrees (people generally eat more, and some of each with several entrees.) That is 200 + 20 pieces of chicken, or about 92 pounds ready to eat. PLUS about 75 pounds raw lean boneless beef, or 50 pounds thin sliced ready to eat.

For 80-85 main dish servings, you want about 10 pounds (dry) of noodles and 4 ounces cooked chicken meat per person, which is about 1 pound raw boneless breast for each 3 people, or about 18 pounds raw boneless chicken meat. Plus 10 quarts of chicken gravy plus whatever onion, celery, mushrooms, sherry etc, your taste or recipe calls for. A topping of buttery cracker crumbs is very nice on these dishes.

Your math per 1/2 cup is good, but I usually allow 4 gallons per 100 people if the potatoes are self serve. See the freezable holdable mashed potato recipe in big pots for some info on reheating. You will need multiple ovens, roasters or crock pots to get them all hot and keep them that way.

Hi, if this is at a time when they won't be hungry, you need the amount as shown on the sandwich page for a reception, you use 1/3 the amount for 100; since you have two, you would do a little more than 1/2 of each to make the total. If it is at a mealtime, use the lunch amount. You want about 40 Danish. You want about 40 regular size rolls, or 60 mini rolls.

So you are talking light appetizers for about an hour-

You want about 60 pounds of cheeses and part can be logs, spreads and cheese balls. 20-22 pounds of crackers and tiny breads or crostini.

Expand your fruit idea to add some veggie trays- maybe 3-4 of my relish trays for 60. These items will keep/ be edible iftheyy are not used up at the party. Then use the fruit tray for 25 list and make about 10 of them, not forgetting the dips.

Nancy, depends on the size of the roll For dinner 2 small or 1 1/2 larger per person. For sandwich, 1 1/3 per person. By weight, about 3-4 ounces breads. Baked beans, around 3 gallons per 100.

Brenda, any recipe with about 70 pounds of potatoes will do. Use one you like, just cut the salt about in half if you make it in giant pans.

I would not do less than 220 pounds pork for this size crowd, and would do 250 if it is the only meat.

5-5qt pails of shredded turkey- 1 quart is 2 pounds, you have 50 pounds, plenty

4-5qt pails each of potato salad and pasta salad= 5 gallons each- short see below
12 large cans of beans- 4 cans is 3 gallons, you have 9 gallons-OK
You have 19 gallons sides you need 30 MINIMUM; I would get 12 gallons of potato and at least 10 of pasta, minimum, add some if it is self serve or you want seconds.

3- 64oz jars of baby dills, OK, but I usually allow 1 gallon per 100, and you also need mustard, mayo, etc all on the condiment table on the sandwich event page

350 buns, OK if they are not heavy eaters

12 -15oz bags of chips SHORT 18 pounds of potato chips (6 pounds per 100)would provide just one side serving per person. For corn chips you would need 8 pounds per 100 for the same size serving.

how much ham to buy- 175 sandwiches at 4 ounces per sandwich- 44 pounds deli sliced, add 10% fudge factor= about 50 pounds

My First Party
I'm throwing my mothers 50th birthday party by myself. This is my first big party. I have some experience from helping but would love some suggestions and help to make me feel more comfortable.

On the menu:
Green Beans w/onion, mushroom & bacon
Swedish Meatballs
Mosticolli
10 ft. Italian Party Subs - cut
Scallop Potatoes
Mac& Cheese
Veggie Tray
Pickle Tray
Chips & French Onion Dip
Ham & Cream Cheese/Chive Roll Ups

I know the basics of making mosticolli but my concern is how much of what I'll need, meat vs. noodles vs. sauce etc. How many trays should I make?

Do you have any ideas of what else I should serve? Looks to me I still need two types of cold salad.

Your advise is very much appreciated.

Shirley, go to the article planning and shopping for large holiday dinners in the holiday cooking section at the top of big pots.

Melanie, unless you are preparing in a kitchen with commercial ovens (church, school, etc), I am concerned you do not have enough oven space for this menu. You also do not say how many people; you need to tell me how many sandwiches and how many people. If I were revising this menu, I would probably eliminate BOTH the mac and scalloped potatoes, allowing the mostaciolli to stand in for these dishes. I would add a layered dip/ platter such as 7-layer dip. I would consider an antipasto platter type salad or artichoke condite instead of a plain green salad- I have recipes for both these.

So give me some more info.

3 ounces ready to eat shrimp plus 1/2 pound raw ribs plus 1/3 to 1/2 pound raw wings PLUS 1/2 pound shrimp for boiling PER PERSON if this is a dinner time meal. You have picked very desirable meats and people will scarf them down. I don't know what is a turkey wrapped green bean?

You only need about 12 gallons of the oyster stew. 170-190 buns (about 20 pounds). 6 pounds crackers per 10 for the soup.

Shayne, is this dessert, fruit salad, dipping, what? You usually need 4-5 ounces of fruit for a serving for 1 person.

Good work, Roland. Since prisket is a fatty meat with quite a bit of shrinkage, just be sure that your briskets total out to at least 1/2 pound raw per person. If the breads are 1 1/2 pound loaves, that should be plenty. The relish tray guidelines on the vegetable tray page should be a help- you would need about 3.

I am doing a party for 350. The marinate recipe i want use calls for pork tenderloin, pork tenderloin will cost so much more so i want to use pork loin because it is cheaper and each slice will be bigger in diameter (so they fit the rolls)

Pork loin and pork tenderloin are the exact same in shrinkage, so you use the same numbers. The problem is with the marinade, it will NOT penetrate the loin nearly as well as the tenderloin; different texture and Much thicker diameter. You can inject with a basting syringe.

1 pound dry is plenty unless you want some left over to freeze. Best with plenty of chopped up onions, celery, etc; tomatoes are good; and there is always the traditional hambone or the equally traditional from the other side of the world curry.

Hi! Leeann, 4 #10 cans is 3 gallons, just about right for 100 people. But I suggest you take a look at my "Ellen's better green bean casserole" in the holiday cooking section at the top of the big pots index page; MUCH tastier and more interesting, and holds better on a buffet table. You would need 3 times the recipe for 180 people.

Carolyn, this is a very nice size party for this event. You want 1 pound raw trimmed brisket for each 2 people (6-7 ounces ready to eat), 2 pounds dried beans (about 1 gallon plus a pint, cooked), for veggies see the veggies for 100 and use 1/4. For cake, a 2 layer 9x13 would be simple and ample- there is a discussion of cake sizes in the dessert planning section.

This site is basically for home cooks- I can't take responsibility for advising pros and caterers at ellenskitchen.com, and always suggest you go to the pro boards such as chef2chef.com for help.

That said, this menu looks a little goofy to me. Is this supposed to be a buffet-style full meal with appetizers before? There are a bunch of things that just don't seem to go, such as the finger sandwiches and tuna salad. The appetizer assortment needs work, such as why serve wings when chicken is the main dish? And what will the vegetarians eat? There needs to be at least 2 vegetables in the dinner selection, and I strongly recommend relish trays rather than tossed salad.

Do you have your liability insurance in place? Do you realize you need at least 3 cooks and a dozen experienced servers to set up serve and clean up this size event? What kitchen, oven and cold storage facilities are available to you, or are you dropping off the food?

I need the number of people expected and the time of day of the party- people eat less in mid afternoon than they do at lunch or dinner.

Finger sandwiches are time consuming to make, hard to keep moist for serving and the leftovers have to be thrown away. Consider a mini sandwich bar with an assortment of small rolls and cocktail slice size breads, with bowls or platters of fillings. Less waste fresher, and MUCH less work.

bbq chicken (a quarter is 2 pieces)- 1 piece each person
collard greens-15-18 pounds ready to cook
yellow rice- 4 pounds dry- you will have some left over
macaroni/cheese-5 9x13 pans
meatballs- 1 pound for each 4-5 people plus sauce or gravy
finger sandwiches- see my note above- skip and offer 2-3 quarts each of 1 or 2 spreads or salads (chicken, tuna, egg, etc). If there are kids, a bowl of swirled peanut butter and jelly will get eaten.
devil eggs- I use 5 dozen eggs for 100, so 3-4 dozen- people love deviled eggs and they are a great buy. There is a how to for large amounts of deviled eggs on this site.
fruit platter- see the fruit platter page, fruit tray for 25. Make 2.
dinner rolls- 2 per person, get an assortment of good ones from a good bakery.

Janet, I assume this is a high veg/potato stew. If so, you need just 1 pound raw boneless beef for each 4 people, but do get a good beef base (any restaurant supply house) to strengthen the gravy. 22 pounds each approximately for each 100 people for carrots and onions. 35 pounds per 100 persons for potatoes.

Shirley, these are so good!If this is the only entree, you want 3 ounces roast pork thin sliced, 2-3 ounces ham, 2 ounces swiss cheese per person. About 3 quarts sweet pickle slices, and though not traditional, you want to have a quart of dill also.
A 1 pound baguette makes 4 sandwiches, so you want 1 4 ounce roll per person plus 10% extra.

You can boil the potatoes, drain cube and chill them, but I would mix and dress only one day ahead- it is nice for the celery to have a little crunch left. You can do the pasta salad one day ahead, use rotini or radiatorre (any of the twisty pastas) rather than macaroni or noodles as it stands up to the wait better.

It is tough to make 3 entrees for this small a group, because you need to make enough of each for everyone to have their first choice which means you will have leftovers of some. I would make 1 piece of chicken per person PLUS 1/2 cup pulled pork (which is about 5 ounces raw, or one pound raw boneless for three people) and 1 pound ham for each 5 people.

Yvonne you did well on just about everything, but you probably need at least twice as many potatoes- they are popular and I allow 9 9x13 for just 100 people. If you really mean cases(24) and not 6 packs, you will probably have a lot of beer and soda left, buy from someone who will allow you to return unopened cases. Of course you need some dessert.

Bonnie, 80 burgers and 80 hot dogs- but consider getting Polish sausage or kielbasa, almost the same price and much more tasty.

Baking potatoes sold by the case weigh 40 pounds and may have 80 (large restaurant type baking potatoes) to many more potatoes (hundred+ for smaller). So if you are serving 200, you have to decide what size potato and then just order the right amount of cases from a produce wholesaler. Don't mess with bag potatoes- you need uniform sizes for easy baking. You need one per expected person, and if you are not sure of your numbers, consider making twice baked potatoes which are very popular, can be made ahead and can be frozen if not used.
I would add another vegetable for a wedding dinner and also fried apples, or crab apples (the little red ones) or a fruit tray to round out the plate.

In my experience, ladies eat basically 1 regular size sandwich (3-4 pieces of tea sandwich), 1 scone or muffin, 1 small slice of cake or tart and 2 of each small sweet (cookies, brownies, etc) up to 4 types, at an afternoon tea. They eat about 2 sandwiches worth if it is lunch time, the sweets stay about the same.

I've been assigned to bring the steamed veggies; am thinking of carrots, broccoli and maybe zucchini. How many pounds of each should I purchase, based on whatever is considered an average portion, given all the other food that's going to be served?

Jan, the veggie tray page and fruit tray page have all necessary information. You use 2 1/2 times the amount for 100.

There is plenty of info on fresh fruit for these trays, if you use frozen, you might prefer to make fruit salad.

The relish tray for 60- use 3 times the tray for 60.

Wedding Reception for 150 People
I am helping my best friend of 40+ years plan her daughterís wedding reception
and we really need some advice on the quantity of food to prepare. The wedding

To estimate quantities, use the guides per person on the articles.
To charge, it is usually about 3 times the food cost. So it depends on the selection; baby carrots, celery and cherry tomatoes with ranch much less than baby corn with kalamata olives. braised asparagus, and grilled red peppers-

Kay, strawberries come in a big range of sizes from small to humongous, and you need 2 per person on a medium or larger berry, so I can't give you a weight on the fruit- get with a good produce wholesaler.

Allow about 8 ounces of dipping chocolate for each 24 berries.

I suggest that you make some of the veggies a relish tray, since you have two other green salads. There is no change in amounts for the fruit tray and veggie trays, but You need to do about 100 servings of each of the green salads, since when you offer a choice, you have to make extra, so everyone can get their choice.

Hello Ellen, We are planning a wedding reception selfserve buffet style for 375, that number gives a little extra also, we planning for sliced beef roast which is precooked and preseasoned so we will just have to warm it in nesco or whatever and grilled chicken as a second choice along with all the other sides (beans, potato salad, fruit salad, pasta salad, etc.) Our meat market recommends 140 lbs of the beef roast, it is boneless by the way, and also 600 pieces of chicken, these are 3 to 3.5 lb birds already divided into 8 pieces per bird. Does this sound right to you? it sounds a little excessive especially in the chicken number. The meat market also thinks the beef will be more popular than the chicken so I don't see reason for such a large amount of chicken. Thanks, Tom

Tom you could probably cut back 15 pounds on the beef, but it is very popular, and many will eat it without bread.

Jayne, I would make 75-80 pounds of potatoes, if it is self serve. People like them and it is the only starch.

It's for 250 and the menu is as follows and it's a buffet: Boneless Skinless chick strips, rigatoni and meatballs, sliced beef, green beans, baked beans, red skin potatoes, tossed salad and dinner rolls. What are your quantity suggestions. I've seen what they are when it's just ONE vegetable or ONE main mean, but they are having 3 meats, 2 beans, rolls and tossed salad. sliced beef, allow 1 pound ready to eat per 3, that is about 2 pounds boneless raw per 5

All the others are actually exactly as indicated on the plan for 100 tables.

I am serving a wedding of 200 people. It will be a build your own sandwich buffet with fruit, veggies, and potato salad on the side. I am trying to figure out how to estimate the amount of veggies needed for a platter for that many and or/ would it be less prep to just make a giant salad? Lori, yes, it is less prep to make the salad, but I would make 2 salads- one green and one starchy (potato or pasta, pasta is easier). Use the plan for 100 amounts. If you go with the veggie trays, use the veggie tray page and don't omit the dip. 2 of the classic relish trays would be a very good idea with this menu.

For the sandwiches, see the sandwich page for amounts per 100, and include the condiments. If they are heavy eaters, use the teen section. There is a condiment table on fixings per 100 which will cover the toppings.

You will need at least 4 serving areas if this is buffet style and not on each table- see the discussion on speeding up the lines by pre-separating the meat servings, ala subway.

Also, what is the best way to keep the fish moist with preparing large quantities? Baked tilapia done in a creole sort of sauce is possible, I would do about 50 servings, 18 -20 pounds, unless you are in a heavy fish-eating area; Most people will want chicken. Diced tomatoes, sauteed onions and celery, seasonings...

Sandra, each of these is on the plan for 100 list, just use 1 1/2 times the amount. Bout 30 pounds of green beans and 5 8to pounds of potatoes fopr seasoning; but you need a starch; 12 pounds of rice or 50 pounds of potatoes.

Yield factor is the difference between the weight as purchased and the weight as served; for example, 1 pound, 16 ounces raw boneless beef, cooks up to 10 ounces ready to serve, the yield is 10 divided by 16 or about 62%.

So if you need 12 ounces of something per person and the yield is 75%, you have to start with 16 ounces per person.

There are yield tables for turkey and chicken in the holiday cooking section at the top of Big Pots.

This is a nice selection of vegetables. If they are side dishes, I would use, raw from the store weight:

carrots about 14 pounds
green beans about 18 pounds
pumpkin- How meaty these are varies a lot. You want to end up with about 1/3 cup (3 ounces cooked) per person, so 1 pound whole makes about 4 servings
cauliflower 1 pound whole per 6
(cheese sauce) 1/4 cup per person

Wedding for 100
I am planning Beef Burgundy w/ noodles. 50# boneless beef chuck eye, Your orange chicken recipe using 36# chicken and honey roasted baby back ribs (about 2 per person.) Will do your mashed potato recipe. Are these amounts about right? What are your suggestions for vegetables? Wedding and reception will be in my home. I will cook all ahead and have only double oven and 2 roaster ovens for reheating food. How many helpers will I need to get the food out, and how long can food be kept safely in chafing dishes?
Have plenty of time to try recipes ahead to be sure all will work.

Jane, PLEASE read the comments on prep in the festive family brunch; you do not have enough kitchen to do this menu unless you add other kitchens. If you are a part of the wedding, you will also need 2 people cooking and about 6 people setting up, serving, and cleaning up for 100 people.

50# boneless beef chuck eye, you need just 40
orange chicken recipe, 36# OK

Skip the roasted baby back ribs (about 2 per person.) If you want something along this line, consider cocktail smokies as part of your appetizers (you need an appetizer table, I have written about this).

Before the Buffet; Why You May Need an Appetizer Table
A self-catered buffet is a real challenge to the organizers, and things don't always come together as smoothly as hoped. By planning and setting up an appetizer area or "nibble table" which is ready when the guests begin to arrive, the cooks and servers have time to complete the arrangement of the dinner buffet. This is especially critical if there are children among the guests, or there is a wait before dinner, as at a wedding reception.

This does not have to be complicated. Three items, plus a punch, or two if one is alcoholic, are sufficient. Typically, include a fruit tray, a cheese tray and an attractive dip or spread; or you can go with a dinner theme such as TexMex with chips, salsas, Texas caviar and guacamole; maybe shrimps if budget permits.

One appetizer service area is needed for each 100 guests.

I do Xmas brunch for 50 to 60 every year, so that site was doubly helpful. Glad to lose the ribs even though they are good. I have two questions.

First. I had been trying how to figure out how to do a salad separate from the buffet. Would Cesar salad and fruit tray work instead of appetizer table? Second, with the frozen mashed pots. can I reheat in crock pots then serve in chafers on the table. Also found your sites of food safety and crock pot safety most helpful.

This mixed fruit and veggie tray is a little hard to estimate because I don't kno0w what it is for, but this would give you enough:
Carrots-4 pounds
celery-4 bunches
grapes-5-6 pounds
strawberries-depends on size- you need 1 per person if large, 2 if smaller- count a quart and estimate that way
cherry tomatoes- 3 quarts
cucumbers- in sticks, 6 large

Some limes quartered makes a nice garnish.

For 230 people, you need more food and some additions. First you want to add an appetizer selection arranged and ready when guests come in and here is why:

Appetizer Table

Rolls, 12 pounds per 100

cake (wedding)- in professional estimates, the pieces on this are very small. A low cost addition is a smaller wedding cake and a 2 layer full sheet "kitchen cake" in the same flavor (serves 100) and/or a grooms cake similar size (allows for chocolate...)
ice cream served beside the cake, about 6 gallons per 100

Hi Ellen, I am contributing a main dish to a buffet party of 60 people. There will be 5 other people also contributing main dishes (others are assigned appetizers and desserts). I would like to make a Chinese Chop Suey recipe that I'm comfortable with and have made many times. It always comes out great but I've never made anything for that many people! How much should I make? Any hints will be greatly appreciated. Thank You!

If 6 people are bringing main dishes for 60 people, you want to bring no more than about 18 people's worth- everybody eats a lot, but no more than about a third of a normal serving, so they can try everything.

So if you usually make for 6, make 2-3 times, for 4, make 4 times (or 2 times, twice); easy. Have a good time.

If fully complete, ie stems and all, 50 pounds per 100, if frozen ready to cook, 26 pounds per 100.

Unless you are in a community where greens are known and loved, consider doing just collards- they are much milder than the others, and less startling to non-Southern tongues.

1 pound of whole papaya makes about 11 ounces after all the seeds are out and it is peeled, and that is about 3 servings- 4 if you are having other fruits as well.

Reduce the amounts 10% after you figure them; with 500 people you get some savings from the overlapping of this many people.

Having a New Years dinner for 10 adults. Have a 10 lb. crown pork roast. Will that be enough meat? How long should I cook it? Perfect size roast. This is a reliable recipe.

Because your roast is 10 pounds, it may finish up to 1 hour earlier. Use a thermometer to check, pull by 150 degrees, let stand at least 30 minutes before cutting.

3 cans black eyed peas will be plenty, unless you are in an area where these are really popular.

Consider frozen green beans- fresher tasting.
You want 2 pounds drained weight of either.

4-5 pounds potatoes, judge according to the appetites of your guests.

2-3 pounds raw cabbage. Frozen collards are another option, tasty and traditional.

Suggest you tweak the quantities, or you will have a lot left over

8 lbs. chopped BBQ- plenty, will make 30-40 sandwiches
you need 3-4 pints table sauce with this, 2 pounds sliced onions, quart of pickles
52 pc. fried chicken- no more than 1 per person
5 lbs. cole slaw- short, at least 8
8 lbs. buttered potatoes- 10-12 - are they big eaters?
8 doz. hush puppies- 6 dozen plenty
