plate lunch for 500 people

How much brisket or pull pork, baked beans, and cole slaw do I need to make 500 plate lunches?

You need to add bread, either 2 slices plain white, or a good roll or cornbread.
For each 100 people, when I am serving the plates, I allow 3 gallons slaw (20 pounds veggies to start); 3 1/2 gallons baked beans; and 5 ounces ready to eat meat. That is 1/2 pound raw trimmed brisket per person or 3 pounds raw boneless pork shoulder per 8 people, plus sauce. You need more if it is self serve.
