Salad Bar to feed 70 people

We are having a salad bar at a church lunch. We are looking to have lettuce, tomatoes, carrots, cucumbers and maybe shredded cheese. Do you have a rough idea of how much of each that I would need? Any information would be greatly appreciated. Thanks.

You need to use the amounts for regular salad plus about 10%. This is covered in the first section of plan for 100- I would count it as 3/4 of 100- you don't say if it is the main course- if it is, you need about 1 1/2 pounds of slalad and fixings per person.
