Quantity for multiple sides

If serving more than one side with a meal, how do I determine the amount to buy, cook? Eg. Ham, scalloped potatoes, green vegetable, salad, bread.

Unless you are serving multiple sides of the same type (such as Greek salad plus Caesar salad plus tossed), the numbers in the plan for 100 table hold. For example, people don't eat less potatoes because there are green beans, but they eat less potatoes if there is also mac and cheese. Your menu has no overlaps; use the tables.
