Is it possible to make Impossible cheesecake in cupcake liners? I have a dinner coming up for 300, and thought I'd try this instead of a nilla wafers crust.

Yes, but you must either use liners or resign yourself to losing some as you turn them out. Also, you will have to experiment with heat and time- they are very different in different ovens.

Thank you Ellen,
My plan is to bake/serve in Foil baking cups, so I don't have to turn them out.
I'm debating which oven to use, my home oven or the commercial oven at church.
