I have a 23pound whole fresh ham (bone in) to roast. I have one of those GE 18qt roaster ovens. Yes....the ham will fit in it. But I need to know for how long, what temperature. Do I wrap the ham? DO I put water in the roaster? Please help. I plan on cooking this starting on Christmas Eve.

Fresh ham usually means an uncured pork roast. This is basically a giant bone-in pork roast and you cook it the same as a well-done beef roast; there is a table for that in the article on beef roasting tips. Use a thermometer to take it to 160 before removing from heat, then let stand 1/2 hour (tent with foil to retain heat) before slicing.
