How much ham do I need to feed 40 people. There will be a buffet of side dishes, deserts, appetizers, however this is the only meat?

You want 5-6 ounces ready to eat, which is about 7 ounces heat and eat or 8 ounces if it needs cooking.

I was wondering how many cooked turkey breasts would be needed for group of 45 people?

Debbie, there is a turkey yield table article in the holiday cooking section at the top of big pots, Go there and you can easily decide how much you need to cook or buy. You want to allow 6 ounces cooked for little left over, or 8 ounces cooked for plenty/ big eaters.
