beef for 200

I need your expertise! I am cooking beef for 200 for a church dinner. what type of beef would be econmical and how much should i buy.
They would also like cheese and crackers and a veggie platter with dip. How much cheese and veggies do i need. Thanks so much!

Assuming you do not want ground beef, a chuck potroast is about the least expensive sliced beef dish. A boneless chuck clod weighs about 25-28 pounds and is good for 50 people if you slice and serve it- add another 10% if it is self serve. You want a slow cook roast with a rich mushroom and onion gravy- make at least 1/3 cup gravy per person. See the beef roasting page in the holiday cooking section for roasting help.
