Thank you for your advice on the rice...you are awesome! Meatball and Veggie Question?

MEATBALLS
So we are having sweet and sour meatballs...i read one of your threads and I have a additional question. For 30lbs of frozen meatballs would I need two roasters of 18 quart or could I use one (have not looked to see if it would fit yet)?

I would thaw them and roast at 225 for 2.5 hours. I plan to put them directly into the cooking well and spraying the sides and bottom. Any advice on how much sauce to pour in (sweet and sour)?

FROZEN VEGETABLES

I also have 24 lbs of Frozen Asian Stir Fry that my family microwaves usually, can I use the roaster for these veggies as well?

I'm clueless if I would put them directly in the cookwell or what and temp. and time.

We will also be adding sweet and sour to these as well.

P.S. it's about 100 G.S. and 67 adults so I think my food quantities are okay plus we will be having 2 mini egg rolls and a fortune cookie.

PREHEAT your roasters for 20 minutes before commencing to cook/ boil in them.

Meatballs- with sauce, at least 2 roasters. Thaw in refrigerator. You need at least 1/2 cup sauce per person, for 165 people that is over 80 cups, or 20 quarts!- heat it on top of the stove before you add it, allowing about 20 minutes per gallon, or it will take FOREVER to heat, to the point of being unsafe.

Vegetables- Yes you can use a roaster for these. Yes you can spray the cookwell and cook directly.

Remember that you need one outlet per roaster, only HEAVY DUTY extension cords (such as the bright orange or yellow shop cords), if used, and one roaster per cord. The roasters draw way more power than regular crock pots.
