We're having a buffet for 100 with hot & cold appetizers followed by caesar salad as a side with salmon teriyaki, ravioli verde, broccoli quiche, roasted potatoes & grilled veggies.
How many cups of romaine do I need? The restaurant I'm ordering from calculates the romaine by the cup (before dressing, croutons & fresh grated parmesan). They suggested 50 cups but they weren't sure based on all the other food we're having. Also, how much dressing, croutons & parmesan per cup of romaine?

Sally, see the info on Ceasar salad for 100 in the top section of the plan for 100 page. Since you have no other salads, you would use the full amount specified. If you make a half cup of romaine and dump it onto a plate, you will see nit is just not enough.
