mexican food plates

I am serving approx 30 people. I am having a mexican food plate/it will consist of a ground beef taco or burrito/and one cheese enchilada and one ground beef enchilada rice and beans.
we will also having all the fixings/let tom and onion,salsa guac.....where do i begin?
i need to know how much ground beef to but as well as how much of the other ingredients??

Brandi, you consider 30 people as 1/3 of 100. Use the salad table in plan for 100 fo rthe lettuce. Use 1/3 the recipe for beans and spanish rice for 100- I suggest you consider the borracho beans at the bottom of the beans for 100 page. Use the baked potato bar table for the amounts of all the toppings, doubling the sour cream and salas as suggested in the table. Be sure to allow 2 extra tortillas, mix of corn and flour for each person for the table use- and gringos like some butter on them.
Flan or fruit salad for dessert, or a plate trim of sliced oranges and fresh cilantro.

When you make your initial shopping list, post it and I will be glad to check it for you.
