My daughter & I are cooking for her reception and want to cook the chicken the week of her wedding, refrigerate it then reheat it in a chafing pan. How far in advance can we do this and will the chafing pans reheat the chicken hot enough?

You would be better off doing further ahead, freezing and rethawing in the refrigerator over 2-3 days. See the Orange Dijon Wedding Chicken recipe in Big Pots. The chafing dishes WILL NOT heat the chicken fast enough or hot enough to be safe; the pans need to be tightly covered and reheated in the oven.
