Simple Appetizers for 75 people

We are serving veggies and dip, fruit tray and dip, cheeseballs and crackers as appetizers
for 75 women. This is right before the Italian dinner served at 7 p.m.
How much of each item that I listed about do we need to have? Thank you.

When preparing for just an hour of appetizers before a meal, you just need to allow 2 ounces ready to eat veggies, 2 ounces ready to eat fruits, and 2 to 3 ounces cheese ball/log per person. The fruits and veggies each have their own page, including amounts for dips/ sauces. Lots of alternatives for the choices- there is a relish tray that would go very well with this meal, with amounts given for 60- it would be plenty for 75 with the other additions. You want 4 1/2 pounds of crackers for 75 people.
