Grilled Beef Tenderloin
Lisa
04/12/08
Hello,

I am having a Kentucky Derby party. I am serving Beef Tenderloin, Corn Chive Pudding and grilled asparagus. How much tenderloin should I purchase to serve 60 adults. Also, how many casseroles should I prepare of the corn chive pudding? Any advice on the asparagus would be appreciated! Thank you! Lisa Gorum

The thing about tenderloin is, people will eat it pretty much till it's gone. You want at least 1 pound raw for each three people, but 1 pound for each two is not too much, especially if it is self serve. Asparagus, at least 28 pounds if you get fresh and are snapping off the ends. You need 6 9x13 casseroles of the corn. And you're off!
